Need some advice on the items that will hold up well in a slightly warmer than room temp ( display lights) display case. I have so far a line of scones, muffins and cupcakes. I am also displaying my pound cakes there as well. I am working on croissants and danishes but the training is taking longer than I had hoped. Any suggestions for something quick to learn or otherwise for the case. I am open and receptive to all ideas.
Maybe use it (the warmth) to your advantage - chocolate chip cookies! the chocolate will be slightly gooey and that's always nice. You might also want to consider tarts that can stay at room temp - like caramel-walnut, pecan, cranberry-walnut, chocolate caramel - in large (9") and personal size... (4").
I am also a huge fan of David Lebovitz' ginger cake which can stay at room temp for a day or so (it mellows and is better the second day in fact) You can find the recipe in one of his books and also on epicurious.com. Which reminds me of the chocolate stout cake....
