The Ultimate Demise of Scratch Baking

Those babyboomers out here will remember the Pillsbury Bake-Off Cookbooks sold at the grocery check-out for 25 cents many, many, many years ago. Okay so I'm dating myself, but during those days women and men really baked from scratch. There was no prepared cookie dough, bread dough or cake mix. You had to know math, flavoring techniques and have strong arms since most recipes called for you to beat the batter 250-300 strokes with a wood spoon to form the cake batter.

The Recipe Writer's Handbook

If you have lived for a while on this earth you will notice that there is very little new under the sun, with the exception of perhaps technology, which we're not talking about here. Putting My Eggs to Pasture

For years in both commercial and home cooking I have used pasteurized egg products ( you know, the egg mixture that comes in a milk carton); but recently I purchased and used pasteurized whole eggs, for an outrageously rich rice pudding I was preparing for a Food History class, in Morrisville, NC. The pudding is cooked, and the egg whites are whipped and… Continue

You Live What You Learn

Recently I corresponded with Dr. LuAnn Soliah of Baylor University about an article she wrote some years ago with a colleague titled “Current Home Baking Practices.” I believe the article was written in 2004. Well, to make a long story short the paper concluded that we just don’t bake the way we use to and our fast paced lives have lead parents and children down a dangerous path. Parents manage to provide food for their children and teenagers; however they don’t teach them about food… Continue
